Thai Red/Green Curry Paste
Ingredients
- 10 Red or Green Chillies
- 1 Large Shallot
- 1 Stalk of Lemongrass
- 4 Cloves Garlic
- Thumb of Galangal (Thai Ginger)
- Half Thumb of Lesser Ginger
- 1tsp Shrimp Paste (or Salt if Vegetarian/Vegan)
- 1tsp Coriander Root
- 1tsp Tumeric Root
Method
Put everything into a pestle and mortar and pound it until smooth.
