Chang Mai Curry Paste
Ingredients
- 10 Red Chillies
- 1 Large Shallot
- 3 Stalk of Lemongrass
- 4 Cloves Garlic
- Thumb of Galangal (Thai Ginger)
- 1tsp Shrimp Paste (or Salt if Vegetarian/Vegan)
- 1tsp Coriander Root
- 1tsp Kaffir Lime Peel, finely chopped.
Method
Put everything into a pestle and mortar and pound it until smooth.
