Seitan
Ingredients
for the seitan:
- 1 cup Vital Wheat Gluten
- 1/4 cup Chickpea Flour
- 1 cup Water
for the broth:
- 6 cups Vegetable Stock
- 1/2 cup Soy Sauce
- 2 tbsp Maple Syrup
- 2 tbsp Cider Vinegar
- 2 tsp Liquid Smoke
- 1 tbsp Onion Powder
- 1 tbsp Garlic Powder
Method
- Combine vital wheat gluten and chickpea flour, add water and knead for 5 minutes, or until spongy and springy. Leave to rest for 5 minutes.
- Put broth ingredients in a large pot and get to a simmer.
- Cut the seitan flour up into small 1-2cm chunks and simmer for 1 hour.
